Monterey, CA. –Award-winning Peter B’s Brewpub, located behind the Portola Hotel & Spa, will debut a cheese collaboration at the 4th Annual Monterey Beer Garden in partnership with Schoch Family Farmstead.

The anticipated Beer Cheese, called Mt. Toro Tomme, incorporates Peter B’s Brewpub’s Stout Ale, which is crafted in house at Peter B’s Brewpub, along with Schoch’s curds and whey. After the Stout Ale was sufficiently infused, the curds were pressed overnight to make delicious beer cheeses that then began their maturation and aging process for over 6 months. During this time the outside rind of the cheeses were washed a couple times each week with a Peter B’s Stout Ale-brine mixture to develop the natural rind mosaic. The raw milk, aged, natural-rind cheeses are very flavorful, with a nice sharpness and subtle beer infused flavor.

“This exciting collaboration was inspired by Beau of Schoch Family Farmstead and myself looking to incorporate local ingredients from Monterey County and combine two things we enjoy – beer and cheese!” said Kevin Clark, Brewmaster, Peter B’s Brewpub.

Following the Monterey Beer Garden, The Beer Cheese will be available at Peter B’s Brewpub and Jacks Restaurant, both located inside the Portola Hotel & Spa. The Beer Cheese will be incorporated into the Peter B’s Cheese Plate.

Established in 1944, Schoch Dairy is located on the famed El Camino Real in the fertile Salinas Valley.  Brothers Adolph and Ernest emigrated from Switzerland and found their way to California, establishing a family farmstead where they could continue the work they knew best: dairying.
