Beverly Hills, CA – May 22, 2018 – The opening of award-winning restaurant, Jean-Georges Beverly Hills, marked the first Los Angeles outpost for globally acclaimed chef, Jean-Georges Vongerichten, and with it came a top-notch team of culinary experts that helm the kitchen daily.
Executive Chef Steve Benjamin oversees the world-class restaurant, Jean-Georges Beverly Hills, along with the rest of the food and beverage offerings at the hotel and The Rooftop by JG. Benjamin, who began his illustrious career in his birthplace of Paris, France, comes to the Waldorf Astoria Beverly Hills after over a decade at L'Atelier de Joël Robuchon at the MGM Grand in Las Vegas. There, his culinary prowess gained worldwide fame, won a coveted Michelin star and brought numerous other accolades to the talented chef. Benjamin's association with Robuchon dates back to 2002, when he trained at the Astor Hotel in Paris.
Benjamin is joined by Chef de Cuisine, Richard Archuleta, who also comes from the Joël Robuchon family of Las Vegas restaurants. Archuleta, a SoCal native, most recently served as the senior sous chef at the 3-Michelin-starred Joël Robuchon. Prior to that, he worked with Jean-Georges for 6 years as the executive sous chef at Jean-Georges Steakhouse, also in Las Vegas.
There to satisfy your sweet tooth at Jean-Georges Beverly Hills is Executive Pastry Chef Deden Putra, who returns to Los Angeles from The Peninsula New York, where he served in the same capacity. Previously, Putra created his dessert delights at the Jumeirah Essex House New York and at the Beverly Wilshire.
Atop the building, Chef de Cuisine, Joseph Castro, oversees popular al-fresco dining hotspot, The Rooftop by JG. Jean-Georges is no stranger to Castro, as he worked for him for the past 3 years in New York City, serving as the sous chef at The Mark and Mercer Kitchen. Prior to joining Jean-Georges, Castro worked for celebrity Iron Chef Marc Forgione. Originally from Miami, Castro’s culinary experience began at a young age when he took his first job at his parents fine dining restaurant, Vida! Bistro, leading him to attend international culinary school, and graduating with distinction, before beginning his professional career.
“It’s essential that every aspect of the hotel, including the food and beverage offerings, meet the expectations of luxury and quality that Waldorf Astoria Beverly Hills guests come to experience,” said Peter Bowling, managing director. “This hand-picked culinary team assures we meet those expectations, establishing us as a true leader in the culinary world.”
Chef Jean-Georges created the menus for the two restaurants at the Waldorf Astoria Beverly Hills, as well as the room service offerings. Jean-Georges Beverly Hills serves breakfast, lunch and dinner, while The Rooftop by JG begins serving guests at 11 a.m., with a closing time of midnight. The menu for Jean-Georges Beverly Hills (the signature fine-dining restaurant) centers around Jean-Georges' famed French-American cuisine, with a soupcon of South American and European flavors thrown in to the organic, and seasonal farm-to-table fare.
